  • 1 cup tri-color quinoa

  • 2 cups water
  • ½ tsp salt
  • ½ cup pumpkin seeds
  • 2 oz extra virgin olive oil
  • ½ tsp salt
  • 1 tsp parsley, chiffonade 
  • 1 oz ‘nade


  • Combine quinoa and water in a pot and cook, covered, on simmer ‘til tender. Salt to taste. Hold warm until ready to serve.
  • Combine pumpkin seeds and oil in a sauté pan. On medium heat, cook seeds until golden brown. Transfer to a bowl and allow to cool to room temp. Hold till ready to serve
  • Spoon quinoa into a bowl, garnish the top with pumpkin seeds and parsley, drizzle with ‘nade.
